Its Tempranillo grapes come from goblet vines, harvested by hand at their point of maturity, in boxes of less than 10 kg. Once in the winery and after cooling in cold rooms, the grapes go through a double selection process (cluster and grain). .
Alcoholic fermentation takes place in small tanks and after that, malolactic fermentation in wooden vats. Its aging in French (80%) and American (20%) oak barrels from the best cooperages occurs for 16 months, achieving a slow assembly of the aromas that provide maturity and structure to the wine.
THE VINEYARD
They are vineyards with ages between 30 and 80 years located at the foot of Monte Toloño. Vineyards with a very low production, which give rise to small and highly concentrated grapes, which gives power and minerality to the wine. In them a special pruning is carried out to a bud with a maximum production potential of 4,000 kg per hectare.
VISUAL
A dark cherry red color with violet nuances can be seen.
NOSE
Aromas of ripe red and acid black fruits (blackberry and plum). Mineral touches of graphite, spices and very complex aromas.
MOUTH
We find a great structure and volume. Fresh, balanced, very complex and elegant. Blackberry, sloe and blackberry flavors.
